Magic Vegan Green Goddess Dressing

This dressing bonds vegetables, grains and proteins into a harmonious dish that sings.

It’s a unifier in these times when unity is so needed.

A few tablespoons on the platter or bowl and your dish not only looks fresh and gorgeous, it also tastes like a master chef made it. It goes on everything, it’s a dressing and a sauce, but also a dip and a spread, that’s why it’s up to you how much water to add – it depends on how thick or thin you want it to be.

Unlike the classic Green Goddess, this recipe is vegan – no mayonnaise, no anchovies – and is made with super healthy ingredients only, and not that many of them.

Feel free to experiment with different greens: mix dill with parsley or cilantro, replace kale with another bunch of herbs, or with spinach or watercress. 

Ingredients:

  • 1 big bunch of dill, washed, thick stems removed
  • 10 leaves of kale, stem removed, coarsely chopped
  • 2 tablespoons Dr. Ayala’s Magic Spice
  • 3 tablespoons rice or apple vinegar
  • 2 tablespoon soy sauce
  • 1/3 cup toasted sesame oil
  • 2 tablespoons peanut butter
  • 1 clove garlic, chopped
  • A few teaspoons of water – enough to thin dressing to the right consistency
  • Salt and pepper to taste (if needed)

Preparation:

  1. In a food processor or blender, combine the dill, kale, Dr. Ayala’s Magic Spice, vinegar, soy sauce, toasted sesame oil, peanut butter, and blend until smooth.
  2. Add water, one teaspoon at a time, and blend again until you reach the right consistency (from pourable dressing to a thicker spread).
  3. Taste and season with salt and pepper to taste.
